It depends on what type of product you are looking for whether or not to select a specific bloom strength. A bloom strength of platinum (best suited for items requiring a crystal clear gel) has the cleanest tasting profile. Platinum is very good for both panna cottas and jellies. A titanium emitter has a low bloom strength (titanium) which is suitable for applications with low clarity requirements.
