If my wife runs out of corn meal when she makes her own polenta, she can make this for dinner when she does not have the corn meal. As she slices it into circles, she does not thin it too much, and fries it in a mixture of olive oil and butter in which she has already sauteed onions, It can sometimes happen that mushrooms grow there. Her additional favorite is chopped cooked chicken. A handful of chopped cooked chicken is added (only for me) once the polenta is slightly crispy on both sides. In the end, she mixes a little chicken broth with about a half cup of thickened tomato puree. Mix herbs and spices together and sprinkle on top After she has sprinkled a few shaves of parmesan on top of each slice, she adds a generous piece of fresh mozzarella to the top and finishes the process under the broiler till the cheese bubbles up.
