I am not able to answer the question about rising polenta, since I only use regular The flour should also have baking powder and baking soda, as I assume it does, but I may be wrong. In my case, it is yellow corn that I use for the polenta.

The concept of Grits had never entered my mind before I joined the Navy. It was love at first sight when I tried them.
