What do you know, I wish I did! Whenever I've used it, the recipes have asked me for the quality of dates listed by number. Instead of a weight, I guesstimate by weight. As well as being sticky, this stuff smells awful.
It needs to be brought from the refrigerator to room temperature for a period of time. Let it sit at room temperature and then knead it with your hands. If you want, you can also rub oil on your hands before you knead.
Refrigerate them so they stay fresh.

This was what I used for making Ka'ak with Ajwa and Maamoul. In response to reviews that say this is sticky, stiff, and difficult to use, yes, it is. It is simply pure dates, so it is very difficult to handle. I mashed it. Pitching dates this way is much easier than calculating them by hand. My favorite method to make the pastries is to add a little olive oil, cinnamon, cardamom, and nutmeg. It leaves me with more time to do other things. In my opinion, the dates themselves are not cheap, so the price is an acceptable level. I would definitely buy another Ziyad product if it became easier to find it within my region.
My confession is that I have something to confess. You will love this if you love dates. Even though I've never baked with it, I have almost embarrassed myself to admit this. The date paste is great because I can make my own date, coconut, and walnut treats with it.
