This is a cold pressed oil according to the product description. I don't know as it's been a long time since I used it, however. A minimal amount of processing normally indicates that. I'm sure the seller would be willing to answer your question.
We use only 100% olive oil for all of our oils. Neither do we mix our products with other oils nor do we water down our products. Our mission at Filippo Berio is to provide authentic, high-quality products for as long as they last In addition, to make sure the color, aroma, flavor, and scientific characteristics of our olive oils meet or exceed the standards set by the International Olive Oil Council, we conduct extensive testing.
Olive oil does not usually contain high levels of omega 3,6,9 linoleic acid, but it may do so in some cases. It may be the case with other oils as well.

The Whole30 program has been a great success for me. When I made my own mayonnaise using the Whole30 compliant recipe (1 1/4 cup oil, 1 large egg, 1/2 teaspoon mustard, 1/2 teaspoon salt, Half a lemon or lime, or you can use vinegar and lemon juice). It made me fall even more in love with it! You can't go wrong with this stuff! There are a few variations on Google if you search around Tartar sauce, flavored mayonnaise, and other condiments that are Whole30 compliant. It's not that at all hard to find olive oil, so I like to buy a big jug of Extra Light tasting olive oil. I guess that's all I have to say. The iol in this product is ideally suited to making Whole30 mayonnaise -- It also comes at a good price!.
