Are you making Risotto? Perfecto! In the mouth, it's nutty, flavorful, and substantial. This rice is designed to be used with a variety of spices and herbs in a variety of ways. You won't go hungry after a helping of this rice, that's for sure. There are a plethora of options for dishes that call for a more delicate rice that isn't overpowering in terms of flavor, heft, or appearance. Risotto is a dish that can be made with a variety of ingredients. It's a rock star, to be sure.
Riso Bello is made with Carnaroli rice, which is similar to arborio rice but larger and holds up better during the long cooking time required in traditional Italian risotto. Carnaroli is one of the more expensive risotto rice varieties, and its high starch content makes it ideal for achieving the "creamy" risotto consistency. Each box will yield anywhere from 10 to 20 pounds of meat. The risotto makes 12 servings, making it a very cost-effective option. You can make a meal out of it by adding saffron, mushrooms, and freshly grated parmesan cheese.
After receiving carnaroli rice in a Blue Apron meal, I went on the hunt for this rice and ordered it. The risotto (from the recipe Risotto with Goat Cheese and Brussels Sprouts) was delicious, and it's the first time I've ever "jumped through hoops" to find a specialty ingredient for a Blue Apron recipe. I thought this package of six boxes was the best value of the Amazon options (since I could eat it several times a week). The rice is vacuum packed in a bag inside the box, with a "best by" date of 3/28/22 stamped on it, so you can buy this quantity with confidence.
Arborio-type trees are preferred. Between bad aldente and perfect al dente, there is a longer sweet spot. There's a subtle difference between this and Arborio, but it's clear why top chefs prefer it to Arborio.
Although I don't think it has as much flavor as other brands I've tried, it makes a good risotto and is reasonably priced when purchased in bulk.
This is the real deal when it comes to risotto. And believe me when I say that I'm an Italian chef who was born and raised.

When I'm in Italy, I always buy Gallo rice, which I adore, and I believe that rice Bello is the same, so they'll always buy it when they're in the US, and it's excellent for me.
