Risotto's only viable option

I'd been having trouble making risotto with generic arborio rice for years until I came across this aged carnaroli on a food blog. I'm sold after a few perfect risottos. The starches are just right, yielding a creamy, gumminess sauce, and the grains are tender but still hold their shape after cooking.
