I'd like to know where citric acid comes from, if possible. ?

Although I'm not sure about the citric acid, the tomatoes are the best; they're organic, delicious, and steam peeled.

How do you reduce the size of the tomatoes so that they turn into a sauce when making a pasta sauce?

Some chefs use their hands to crush the tomatoes. Others would rather use a blender to 'grind' them. If you're going to use a blender, don't completely 'blend' the tomatoes. 'Pulse' the tomatoes to make a fine powder. Before adding the tomatoes, I coat the pan in good olive oil and warm it up. Cooking time is 30 minutes or less, with evaporation reducing the volume of the sauce and allowing it to thicken during the cooking process. Allowing the mixture to cool without a cover on the pan will allow it to thicken even more. br>Before adding the tomatoes, I usually sweat 2 or 3 garlic cloves in olive oil over low heat, and remove the garlic before it turns brown. Some people prefer to keep the garlic in the sauce; others prefer to remove it. If you go this route, be careful not to brown the garlic too much. The sauce is completely ruined by burnt garlic. br>The most important thing to remember is to season the sauce with enough salt (I use sea salt). 'Gravy,' not'sauce,' is how most Italians refer to it. 'br>In most cases, fresh, chopped parsley is also added. Beyond that, it's up to you to customize and be inventive: you could add crushed red pepper or chili peppers to the olive oil. Alternatively, freshly ground black pepper can be added. Alternatively, use dried oregano leaves or a bay leaf. Some people in Italy add a pinch of dried sage, for example. Some people use grated cheese that has been freshly grated. I keep the cheese to use as a garnish for the pasta. And, while it may seem sacrilege, some people add a pinch (or more) of sugar to balance out the acidity of the tomatoes.

I recently tasted a number of canned tomato brands straight out of the can, determined to find the best canned tomatoes (my husband is Italian and I am a recipe tester and developer). br>I used to have a monthly subscription to the Cento brand, but when I tasted it against other brands, it fell short. br>br>Thickness: The puree is medium thickness, not as thick as some, but it has a lot of body. br>Deliciously sweet: There is insufficient sweetness. There is no added sugar in any of the brands; the sweetness comes solely from the tomatoes, but there was a significant difference in natural sweetness between them. This was a miss. br>Acidity/Sourness: To date, this is the most acidic/sour brand I've tried. This isn't immediately apparent until you taste test several different brands in one sitting, at which point it becomes clear. br>To summarize: The flavor profile was disappointing due to a lack of sweetness and higher acidity; thickness was good, but flavor is what matters. br>br>After cross-referencing, In comparison, I cancelled this brand's Subscribe and Save order and will not buy from them again. The best before date on the can is the following month, and the cans have dents on them

When I bought these in July, the cans were dented in several places, and the best by date on the top of the cans said Aug 21. While I am not concerned about the dents because no one appears to have pierced the can, each of the six cans has multiple dents. I wouldn't buy a grocery store can that was dented in this way, and I was hoping for something in better shape. br>I frequently use these and enjoy the product; however, because they are hard to come by in my area, I decided to purchase a pack of six and use them over the next few months. I won't be purchasing anything else in the future.

I didn't expect it to be as bitter and metallic as it was

I made tomato soup and found that I needed a lot more sweeteners and flavorings than I anticipated to balance out the bitter, metallic flavor. It'll suffice for canned tomatoes, but I'll continue to look for a better brand. br>br>Recipe for Tomato Soup: mirepoix: 1 large onion, 4 celery stalks, 4 carrots, 1/2 cup butterbr>1 6 oz can tomato pastebr>4 cups chicken stockbr>2 large peeled tomatoesbr>4 bay leavesbr>2 c cream or whole milkbr>Saute mirepoix Add the tomato paste and cook for a few minutes to allow the color and flavor of the paste to develop. Add some chicken stock to deglaze the pot, then the rest of the stock. Simmer until the tomatoes are soft, then add the bay leaves. Remove the bay leaves from the dish. Blend until smooth in a pot with a Bamix. Cream should be added at this point. Serve with grilled cheese sandwiches on a rainy day, seasoning to taste with salt, pepper, brown sugar, olive oil, curry powder, parsley, basil, and other herbs and spices.

These are without a doubt the best canned tomatoes I've ever had. Simply delectable. Cento can only use vine-ripened tomatoes, not the pulpy, hard, tasteless unripened tomatoes that we commonly find in the United States. Normally, I only use canned tomatoes in dishes (like spaghetti) because they aren't tasty enough to eat on their own, but these Cento tomatoes are different - they are delicious on their own. They're something I really want! I serve these as a side dish, heated and topped with parmesan cheese (individual portions can be made by microwaving in small covered bowls - see notes). a single one for each and every visitor - The deep red sauce, topped with melted parmesan, makes for an attractive presentation). The sauce in which these are encased is thick and flavorful - Normally, I drain the watery "juice" from a can of tomatoes before opening it, but not with these - The sauce has the consistency of a San Marzano puree and is just as tasty as the tomatoes. These are organic and non-GMO, which I appreciate. The can is non-GMO and free of BPA. The ingredients are straightforward and healthy: Organic whole plum peeled San Marzano tomatoes, organic San Marzano puree, organic basil leaf, naturally derived citric acid, and organic salt (no sugar added). Also, there aren't any ingredients that sound "chemically. ".

I decided to use this product to make sauce after reading the positive online reviews. I was disappointed to discover that each can only contained 3 or 4 tomatoes, with the remainder being a watery puree. There aren't enough tomatoes to make sauce even after straining the contents. If the contents are not stained, the sauce will be too watery and will take twice as long to cook down. This is the sauce to buy if you prefer a very watery sauce.

NOTHING, AND I MEAN NOTHING, CAN COMPARE TO THE TOMATOES FROM THE ITALY VALLEY. MY WIFE IS ADIAN, BUT WHEN IT COMES TO GOOD SAUCE, SHE GOES CRAZY. SOME CALL IT GRAVEY, I KNOW.
