Is it possible for me to play zombies without Wi-Fi?

It is not required to use WiFi when playing with bots. In multiplayer games you only need wifi if you're actually playing against others.

Do I get an extra map with the normal game?

There is no hope, unfortunately

This method does It will not install, there were two different discs, neither of which was compatible with the installation software
