What is the best size for M?

Because they are all the same height and depth, measure the length of your gun with the stock extended to the desired length and you'll have your answer. I'd give it a few more inches of room to breathe.

The bag is nice, but the zippers are difficult to operate

Zippers are difficult to start from wide open to close,, don't be in a rush to sip up bag,, I've had it for a while and it hasn't gotten any better,,, not sure about two rifles fitting as with a scope I don't think it's possible,,.
