It's unlikely that it would perform as well as a traditional Weber kettle. The steam produced by the water when it comes into contact with the heat is the primary temperature control. In the end, I believe you are defeating the purpose of the Smoke Stack on a WSM by placing the meats above it.

Temperatures can be dialed in with minimal trial and error using simple controls. Bend test, smoke ring, and flavor feedback from raving fans were used to create perfect brisket, chicken, and ribs. It's probably not as good as a good offset smoker, but it's a lot better than the alternatives.

Last year, I purchased the Smokestack, which I adore. I'm a member of a competitive BBQ team, and I've competed in over a dozen events, winning one first place in ribs, three top five finishes, and numerous top ten finishes in pulled pork, chicken, and brisket. Because our competition rig is over 900 pounds and ineffective for small batches, I looked into converting my charcoal grill into a smoker and came across the Smokestack. I've smoked on a variety of rigs, including vertical, electric, pellet, and so on, but the Smokestack provides the most consistent temperature with the added benefit of a built-in water pan, which keeps everything moist and delicious. You can achieve this consistent temperature and moisture while still getting the fantastic bark we're all after. In conclusion, if you want to turn your existing grill into a competition-level smoker, the Smokestack is the way to go! 5 stars.

There's no need to put it together, and it's simple to use and clean. br>br>Its ability to self-regulate earns it 5 stars. maintain a comfortable temperature I only had to add a smidgeon of wood every hour or so to keep the temperature just right. Set it and forget it is the best way to describe it. br>br>The food was excellent. I would strongly suggest it.
