Pure alder may not be here, but this is a mix of alders Blended is the best way to describe it. A kind of mild hot dog flavor was perceived by the tasters after blending the two sauces together. It is not clear if there are other woods in the area. My stick burners are made with pure alder, I use it for many years now Both the taste and the smell are off with this product. Per their own website, Bear Mountain pellets are made of blended woods-- Lumber Jack is what I use for everything else - Unlike mystery blends, theirs are made of 100 percent of the wood you want. I've tried Smokehouse brand because Lumber Jack does not sell alder so now I'm looking for another option. There is a label that says 100% alder is used. A brief update.
In our smokehouse, we have started using wood pellets after running into a sourcing issue with our traditional suppliers. Making a switch in this important part of our production after 25 years in the smoked meat business was a little difficult for us as we were cautious about what to expect. The quality of this product is the best, and we are confident using them while we smoke an array of different products and have never seen anything but great results. It works as it should. There is a weight discrepancy between labeled and actual weight. The first impression was that it felt lighter than you would expect for a 20 lb, and since it was still sealed, I stepped on the scale and it was It was 11% lighter than advertised, so we got 8 pounds less. There is probably a similar volume and the alder wood I received is a little lighter than others, but they should change the volume, or adjust the actual weight, or if they want to hit 20 lbs, increase the size of the wood so it actually does weigh this amount. In light of the fact that it is still a good deal, I decided not to make any judgements until I have I found the flavor to be as expected, and I could not detect any additives. I used a smoke tube to smoke it and it produced a lot of smoke. Burn was good and steady smolder (I burned it in the tube). The pellets didn't disappoint me, even though it was my first time using them. I would say all in all this was a good product/price, but I would knock one star off for it being too light.
While I had a little concern that I may not like them as much as the more expensive brands, I believe they are the same product. In terms of size, shape, color and flavor, they're similar to the others, and they smoke or cook the same as the others. This is a highly recommended product. My first order of wood pellets this time was Apple and Alder. I have also dealt with Oak, Hickory, and Cherry pellets previously and always had great results. The shipping was fast, and the price was great.
There seems to be no indication that the alder is not 100% alder. It annoys me as well that there is no transparency with the other flavors about whether the wood is exactly as it is on the The term "100% hardwood" has mainly been used as a marketing ploy.
Pellets are firmly made so there isn't a lot to crumble in the auger, and they smell great.
There is a strong desire on the part of manufacturers to have you use "their" pellet. Relative income is what we call that. There are less expensive pellets that work just as well as the expensive ones. A perfect flavor profile has been achieved. I can't think of anything wrong with this.
