It wasn't the first time I'd used bench scrapers when I worked in commercial kitchens. is probably my favorite, because it's square, sturdy, and has an edge that gives it a nice bite. The grip is comfortable. I don't know how else to describe it. In addition to squaring cakes, I have used it to shape bread and to scrape the counter top. The sharpness of this knife is extremely important to me since if I'm making cinnamon rolls or other decorative bread that needs to be chopped, it works very well, and I don't need to clean a knife. It is nice to be able to use the side to measure instead of having to look for that the stupid logo has to be visible on it all the time, as if Amazon is making itself recognizable on our dinner plates every day. Although, from the point of view of performance, I can overlook that.

A helpful feature on this scraper is that it also has measurements on the edges. Despite its sturdy construction, it is easy to clean and well made. The light blue color of the handle is also appealing to me.

When I have some soft sourdough, I can hold it in one hand and scrape it along the board while turning it over, which saves me some hand-washing and sometimes even a small loss of dough. But I will use it mostly for cutting dough. As an example, rather than employing round biscuit cutters for my sourdough cookies, I will use this bench scraper to cut the dough into triangle shapes Rather than rounding up unused dough around the edges of circles and attempt to incorporate it into a more conventional shape, keep it as is. The ways in which the dough rises in the oven affects the shape and position of the triangle biscuit!.

There are other places to go if you want the flat part to be flimsy. I was able to get everything I needed and more. I'll chop it up (part). In addition, I really like the pretty handle.

This bench knife is amazing in almost all aspects- Simple and easy to clean, easy to store, and easy to use. If you don't have any other tools on hand, the blade comes with a ruler that is a handy extra. In my opinion, this item cannot be weighed down by the amount of use that it receives, and for that reason I highly recommend it.
