The shrinkage is excessive. There is a LOT of nonstick on the pan It can be good to use a stick, but there are downsides too. Using this pan for pâte sucrée (sweet pastry tart crust), the shrinkage was so bad that I could not even use the filling. When I baked it, it was flat and had no sides at all. Putting the baking sheet in the oven I used a crust that was frozen for three days, with the pastry hanging slightly over the sides.
