A serving is 1 according to the can. The instructions say to use 2 tablespoons of curry powder depending on the type but don't say how many servings it makes. When stirred into coconut milk and other items, the product is meant to be served over rice or noodles. Even if it's going to be eaten in a few days, you can store it in the refrigerator if you don't intend to eat it right away. The green curry is made according to directions on the can, however I watched a woman cook it. Until the paste was fragrant, she fried half of a can of paste in a small amount of oil. In the end, she added a can of coconut milk, swirled in a little water to get the last bits on the sides of the can, added a tablespoon or so of fish sauce, and added It was deboned chicken that she added when the liquid came to a boil. She then added (cooked) carrots, (defrosted) green peas and (canned) bamboo shoots when the chicken was nearly done. Despite its spicy nature, it is not too hot. There are those who have never eaten authentic Thai food who are calling it too spicy. If you order any spicy level above 1 at your local Thai place, or you enjoy any type of hot sauce on your food, then this stuff won't be too spicy for you. That being said, make sure to read the instructions carefully. Obviously, you need much more coconut milk than you get in a conventional can of paste (assuming you do it the whole way). It is also possible to use a fraction of the can and freeze the rest. Once I had used the filling from the paste can, I put it in the freezer in a ziplock bag for a week until I could use the rest.
