A product like this has a shelf life of two years after it is manufactured. At this point, the product has been in our possession for one month, since it's directly from the manufacturer. Pickled in oil since it is a pickled product. Ideally, you should store at room temperature or keep the oil level at least above the Giardiniera if you store at room temperature. When you refrigerate, you might find the oil thickens, but returns to the proper consistency once it is returned to room temperature. It is likely that after the two year period the quality of the Giardiniera will diminish. Here's what I can tell you to help you.

bitter yet delicious flavor is amazingly addictive. I use it in salads, tacos, burritos, with Italian Beef, eggs, and anywhere else you need a little kick. Using the oil to cook chicken, eggs, and various vegetables is a good use for it.
am sensitive to spicy food, and I have gotten some fantastic meals out of them, largely because they aren't pickled and don't add a pickled taste. They are a great addition to anything you want to spice up, and you don't need much. The quality of the writing has impressed me. It's the oil that does the heavy lifting here since I did not refrigerate my jar and I live in hot and muggy Minnesota where things can go moldy in days. I can assure you that, even with small amounts, vegetables won't go bad as long as they are covered. If you do need to use them up, you will run out long before they go bad. Though you might want to purchase an old wooden strainer spoon before using it. Don't spend your money on this the oil gets everywhere if you try to lift it, and if you accidentally get some in your eyes, that will be very unwelcome. The experience is less than pleasant, believe me.
