I get palm sugar from a local Asian store that comes in big pieces that have to be crushed into fine powder by hand. It appears to be as fresh as the palm sugar I get from my local Asian store. As with my Thai sauce (often consisting of soy sauce, fish oil, vinegar, chili paste, etc) I boil it first before adding 1 to 2 tsp. sugar to dissolve it faster. The fact that you don't have to pound and cut first is handy, but the price is somewhat high at $9 for just 8 ounces. The palm sugar is less crumbly than brown sugar and it is quicker for me to use now that I'm not using as much per recipe. I usually only use a tablespoon per recipe so it lasts a long time.
With this product, since it is granulated, you are able to measure it easily and it is 100% better to use.
I think it is the right stuff my Indonesian friend was looking for, but it is expensive.

It is hard to find palm sugar that is easy to use (not in large Authentic curry tastes great when made with a curry maker.
