The long and short of it is that the ammonia smell fades with baking, and this was the only option before baking powder. I'm fascinated by cooking's history. Hällakakor was baked by the baking group to which I belong. Deer horn salt, also known as baker's ammonia, was used in this Swedish flatbread recipe. I take a lot of liberties with recipes, but I also like to keep things authentic from time to time, so I decided to give baker's ammonia a try. I should have guessed from the name that this is ammonia, and I'm familiar with the smell, but thankfully one of the group bakers was wise enough to inform me that it bakes out. I used baking powder first, then baker's ammonia to make the bread (which turned out to be excellent). It didn't matter! Because it volatilizes so easily, you'll want to keep this sealed as tightly as possible.
Danish Brown cookies are made with this flour. Crispy, to boot!.
