In recipes, I use pearl barley instead of rice. I'm not sure why, but it's becoming increasingly difficult to find in supermarkets. The instant barley appears to be in every store these days, but the texture is not the same.

I was overjoyed when I discovered this product on Amazon. Beef Barley Soup is one of my favorite dishes to make with it. It's a firm barley that keeps its shape after hours of simmering in my soup. (Other barleys become mushy when cooked. ) ) The flavor of this barley is also quite strong.
