Yes, that's the short answer. It doesn't matter to which cat you refer. These connectors belong to the RJ45 category. However, the coupler merely extends the cable's length physically it does not increase its speed or shielding. Cat 7 is the newest standard with faster speeds and better shielding.
If you increase the distance of an Ethernet cable, you will see some degradation, but unless the cables are together longer than 100 feet you probably won't see it.
I tested it on my POE security camera, and it worked.

It appears that there are a lot of issues with this product and I would like to provide PoE is said to be blocked by some.
