LS motors will fit - I had them installed on my 6 - so I'd recommend it.
The bolts will seal the exhaust system, I would also suggest a set of Mr. Gasket 2235G Headlock Locking Header Bolts (Set of 12) you will never have a leak again and I've used these on several trucks so far.

This is the ideal replacement for composite blown-in flooring Gaskets made by Pro Gaskets. Originally, the gaskets had been so brittle that they broke apart Immediately after installation, these aluminum gaskets sealed up the leak after just a few minutes. A stock head LS1 should be properly installed and cleared of gaskets before the gaskets are installed. There was a bolt on the side of the vehicle on the passenger side rear of the head, where the best view was offered only under the car, and I had to bend the end of the extended tab of the gasket corresponding to the location of the bolt. The gasket must be positioned correctly to ensure it is clear of this bolt. The problem was easy to solve once I figured out what was causing it.
