Is this product suitable for using in the construction of a meat smoker?

I doubt it unless you can seal it, because it's as bad as asbestos and will degrade into an airborne killer.

Is it possible to use this on an electric range with mice-infested insulation?

It specifies that it is intended for use in ovens in the product description. I got a kit for the last oven I built, so everything was already cut to fit. Because this item is rated for a temperature of 2300 degrees Fahrenheit, you could cut it to fit.

I purchased this insulation to replace the mice-infested insulation on a Maytag propane 4 burner

It was well worth the money. It was ideal, and cutting it was a piece of cake. Insulation that is superior to the original. This item is ideal because it is made of ceramic, making it less appealing to rodents in the future. Not to mention that it makes for a better insulated oven. Instead of buying a new stove, I saved hundreds of dollars by repurposing a propane stove. I still have enough for my pizza oven project on the patio.
